Mazesoba is our signature

Mazesoba is a bowl of noodles served without soup. You mix everything together yourself before eating. Our noodles are unusually thick, so the sauce and oil cling to them. If you have never had it, start with the plain Buttoi Mazesoba.

Extra-thick noodlesJapanese mochi wheat, hand-rubbed to order. Chewy and uneven on purpose.
No soupMazesoba has no broth. Mix it well, then eat.
Choose your size200g to 400g at no extra cost up to 300g. Mazesoba only.

All prices include tax. Noodle size for mazesoba: 200g and 300g are the same price, 400g is 150 yen more. Ramen comes in one size. There is also a monthly special - see the poster inside the shop.

How to eat it

Four steps for mazesoba

MixMix everything together thoroughly before your first bite. This is the most important step.

Raw eggDip the noodles in the raw egg, the way you would eat sukiyaki.

Change the flavourOn the table: flying-fish vinegar (one splash), house chilli oil (one spoon), garlic sauce (two spoons), fish powder.

FinishAdd rice to what is left in the bowl. Or pour in dashi broth and finish it as a soup.
